This recipe was inspired by Wellness Mama’s Jelly Babies recipe but I’ve added a couple of additional ingredients. The sweets aren’t as chewy as the store-bought sweets but they’re firm and really good, without the toothache I usually get from store-bought nasties.
2 cups fruit juice (I juiced fresh pineapple and strawberries)
1/2 cup gelatin
1/4 cup raw honey
1 teaspoon buffered Vitamin C powder (I used Kirkmans Buffered Vit C)
1 teaspoon Probiotic Powder (I use Metagenics Ultra Synergy)
Mix the juice, probiotics and vitamin C together. Gently heat the fruit juice mixture and honey without bringing to the boil. Remove from heat once simmering.
Slowly sprinkle the gelatin into the juice mixture while blending with an immersion (stick) blender. You can mix it with a whisk but the immersion blender works much quicker and ensures you don’t have any lumps.
Pour into silicone moulds and place in the freezer for 20 minutes until set.
Remove from moulds and enjoy!
